Challenge
Help a deli salad assembler / processor create a clean-label offering to open more market channels and remove Potassium Sorbate from their label.
Process
Our Account Manager presented various antimicrobial options to the customer, and it was clear that Microgard 730 was a great solution to begin testing with, as it provides full spectrum protection for yeast, mold, gram negatives and gram positives. Our Account Manager then met with the customer in their facility and began a hands-on demo with the Microgard 730 sample, demonstrating how to incorporate the ingredient into the pre-made deli salads. After understanding the customer’s assembly and production process, we gave very concise details for how to implement the Microgard 730 in a “mayo slurry” and then reintroduce the slurry into the entire batch to improve dispersion.
Solution
The customer was thrilled with the performance of Microgard 730 in their products, as they were able to clean up their label, obtain 21-day shelf-life and expand into Trader Joe’s and other regional grocers in deli tubs.
